Grapefruit Bircher Muesli

Grapefruit Bircher Muesli

After our very indulgent Chinese New Year, it feels right to be yet again thinking about eating lighter and being a healthier person. I have to admit one fruit that I was never that keen on was grapefruit. But I thought this recipe from Gizzi Erskine, famous for her clean eating, is probably a good place to start in trying this plump, sunshine looking fruit. Now check out the very healthy ingredients 🙂

Ingredients

Do you know Bircher muesli is invented by a Swiss doctor named Maximilian Bircher-Benner? He created this little dish in the hope of introducing more fresh fruit into his patients’ diet. What a dedicated doctor!

It’s incredibly easy to make as you just soak the oat and dried fruit with a bit of grated apple in nut milk, leave it overnight in the fridge for the flavours to mingle. Then voila! In the morning you just add a dash more milk and some yoghurt and fresh fruit, and you’re good to go. Here’s the recipe:

Ingredients

For the muesli

  • 100 g oats
  • 2 tbsp. mixed dried tropical fruit you can buy this from the supermarket, it has dried pineapple, mango and banana)
  • 2 tablespoons chia seeds
  • 1 tbsp flax seeds
  • Handful of almonds roughly chopped
  • 350 ml milk of your choice (almond or drinking coconut works best with the grapefruit)
  • 250 ml freshly squeezed ruby red Florida grapefruit juice
  • 1 grated apple
  • 1 tablespoon maple syrup
  • a dash of all-natural vanilla extract

To serve

  • 4-6 tablespoons of Grapefruit Bircher muesli
  • 2-3 tablespoons thick Greek or coconut yoghurt
  • a couple more slurps of almond or drinking coconut milk
  • 1 Florida grapefruit peeled and cut into segments
  • 4 tbsp of mixed berries I love strawberries, raspberries, blueberries, redcurrants
  • 1 kiwi fruit peeled and cut into slices

Instructions

  • Mix all of the ingredients for the Bircher muesli together in a bowl and mix well. It will be too wet at this stage but the soaking process drinks up all that liquid and flavor. Now make sure it’s covered with cling or popped in a sealable container and place overnight in the fridge. This stores for 4-5 days.
  • When you’re ready to eat, split the muesli between two breakfast bowls, top with yoghurt, a slurp of milk and then the fruit and serve straight away.
